Unlike ordinary artificial whetstones, there is no need to soak it in water for a long time before sharpening; you can start sharpening immediately by simply adding a handful of water. The sharpening feel is close to that of a natural whetstone, it has good grip on stainless steel and steel, and is characterized by shallow sharpening marks. The slurry that comes out during sharpening contains abrasive particles, so sharpening together with the slurry allows for an efficient finish to the blade edge. After sharpening, wash off the slurry from the surface of the whetstone and store it close at hand without wrapping it in a dry cloth. When you feel that your knife has become dull, take out the whetstone and sharpen it quickly without hesitation. A sharp knife promises delicious cooking. Each "Morihei [Fire] Sharpening Stone" undergoes rigorous inspection before shipment. It's also characterized by its ability to be without problems on steel and stainless steel blades. The "Fire" series is an original artificial sharpening stone that combines the advantages of both natural and artificial sharpening stones. Morihei, founded in 1933 in Asakusabashi, Tokyo, is a company that enjoys the deep trust of culinary professionals in the field of blades. This is a long-established wholesaler specializing in natural whetstones. The fourth-generation owner, Akimitsu Oguro, is known as one of Japan's foremost experts in sharpening and discerning cutlery. It was Mr. Oguro who conceived and perfected the "Hi" series of artificial whetstones after five years of repeated prototyping. By combining the advantages of natural whetstones—their sharpness and smooth finish—with the consistent quality of synthetic whetstones, we have created a whetstone that is easy for a wide range of people to use, from professionals to home users. This is a 500-grit coarse whetstone. A 500-grit coarse whetstone is when there are small chips on the knife. It is a whetstone to remove chips. An innovative whetstone that works on both steel and stainless steel. Formulated with rare natural stones, this whetstone offers a sharpening experience similar to natural whetstones and is suitable for both steel and stainless steel. Yoko Arimoto is also a fan. "I went to a long-established knife shop and asked for the easiest whetstone to use, and this is what they gave me. It's certainly easy to use. When you sharpen your knives and make them sharper, the food tastes better. It's not just about the appearance; the smoothness of the cut also affects the taste," says Arimoto. No need to soak in water for a long time. While typical artificial whetstones require soaking in water for a while before use, this whetstone can be immediately by simply adding water. Ordinary whetstones absorb moisture, making soaking essential. On the other hand, this product, with its dense structure like a natural whetstone and resistance to water penetration, does not require soaking in water before use…KR1345
